Artichoke Pasta Toss

Ingredients

2 cup        Rotinni (veggie spirals), uncooked

1 1/3 cup  Zesty Italian Dressing or "Fat-Free" Italian Dressing

8 oz          Canned artichoke hearts in water, drained and quartered

2 cup        Broccoli florets

1 cup        Fresh small button mushrooms (opt)

1 cup        Cherry tomatoes, whole

1 can        Pitted whole black olives, small size

1/8 c         Fresh parsley, snipped

 

 

Directions
Cook noodles according to directions on package in salted water.  While the noodles are cooking, prepare a double recipe of Zesty or "Fat-Free" Italian dressing and set 1 1/3 cups aside.  Drain and rinse noodles.  Pour Italian dressing over hot noodles.  Add vegetables and toss until well mixed.  Cover and  chill salad at least 6 hours before serving.
